Wilton 8B: Wilton 8B is very easy to use, but creates a beautiful decoration. Start in the center and, using medium pressure, swirl upward. You can see I used it on these white chocolate strawberry cupcakes and these chai latte cupcakes. The most popular piping tips people often get when first starting to pipe cupcakes is the 1M which is an open star tip and the 2D which is a closed star tip, but which one do you use for which swirl? In this weeks video I thought I would compare the two so you can see the differences and this will hopefully help you choose the right one the next time you are piping cupcakes. The 1M or the 2D Wilton 1M: Wilton 1M is a classic piping tip and the buttercream rose is a staple decoration. Start in the center and, using medium pressure, pipe a flat swirl. You can see this lovely rose decoration on this 6 inch birthday cake. You can also create two-toned frosting roses. You can also produce a decoration that resembles soft serve ice cream. Wilton 2D

Holding tip 104 vertically with the skinny end pointed upward, pipe a few squiggles in a swirl in the very center on the cupcake. Continue to add ruffley piping in a circular pattern around the center swirl until you reach the edge. This is my all-time favorite design, and I often use a few different colors with this technique. It never fails to impress. Create individual little petals and arrange them into flowers, or use it to add small ruffles around your cake! One note: I create TWO looks with the Wilton 1M. That’s the tip I use and recommend for two-toned frosting roses, but it’s also the tip I use to create soft-serve looking swirls as shown in the video tutorial above.

Holding tip 104 flat against the cupcake with the thinner edge pointed outward and the larger edge pointing to the center of the cupcake, pipe a row of ruffles around the outer edge by moving the tip slightly up and down. For the next set of ruffles, hold the tip at a 45 degree angle and pipe the next row so that it stands a little bit taller. For the final and innermost set of ruffles, hold the tip at more of a 75 degree angle so they stand taller than the previous set.
